· 2 cups crushed tomatoes

· 1/2 tsp dried thyme
· Salt and black pepper to taste

Finish

· Fresh parsley, chopped
· Lemon wedges (optional)

Step-by-Step Instructions

1. Prepare the base

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until softened and fragrant.

2. Build the broth

Add crushed tomatoes, broth, paprika, oregano, and thyme. Stir well and bring to a gentle simmer.

3. Cook the fish

Add the fish chunks and simmer for 5–6 minutes until they begin to cook through.

4. Add the seafood

Add shrimp and mussels. Cover and cook for 5–7 minutes until the mussels open and shrimp turn pink. Discard any unopened mussels.

Taste and adjust salt and pepper as needed.
