A traditional Louisiana Creole jambalaya combining shrimp, smoky sausage, rice, and tomatoes in a rich, spiced one-pot dish full of bold Southern flavour.
Ingredients
Protein
- 300 g shrimp, peeled and deveined
- 200 g smoked sausage (Andouille preferred), sliced
Base
- 1 cup long-grain rice
- 1 small onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
Sauce & Seasoning
- 1 can (400 g) diced tomatoes
- 2 cups chicken broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
Finish
- 2 tbsp olive oil
- Fresh parsley, chopped
Step-by-Step Instructions
1. Heat
Heat olive oil in a large pot over medium heat.
2. Cook Sausage
Add sliced sausage and cook until browned (3–4 minutes). Remove and set aside.
3. Cook Vegetables
In the same pot, add onion, bell pepper, and celery. Cook for 4–5 minutes.
Add garlic and cook for 1 minute.
4. Season
Stir in paprika, thyme, cayenne, salt, and pepper.
5. Simmer
Add rice, diced tomatoes, chicken broth, and cooked sausage.
Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
6. Add Shrimp
Add shrimp and cook for 5 minutes until pink and cooked through.
7. Finish
Garnish with fresh parsley and serve warm.
