Ingredients

Pasta

  • 2 litres water
  • 1 tbsp salt
  • 250 g linguine pasta
  • 1 tbsp butter (optional)

Chicken & Aromatics

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 whole head garlic, finely minced
  • 3 sweet red peppers, finely chopped
  • 3 coriander leaves, finely chopped
  • 1 chicken breast, cut into small cubes
  • Salt and black pepper to taste

Sauce

  • 1/4 cup white wine
  • 1 cup table cream or all-purpose cream
  • 1 tbsp tomato paste
  • Parmesan cheese to taste

Step-by-Step Instructions

1. Boil the pasta

Bring the water to a boil in a large pot. Add the salt and linguini. Cook according to package directions until al dente, usually 8 minutes.

2. Drain the pasta

Drain the pasta and return it to the pot. Add butter if desired and toss gently. You can also add a little Parmesan cheese and black pepper.

3. Cook the aromatics

In a large skillet, heat the olive oil and butter over medium heat. Add the garlic and sweet red peppers and sauté until softened and lightly golden.

4. Cook the chicken

Add the cubed chicken breast and coriander. Season with salt and black pepper. Cook for 6–8 minutes, stirring often, until the chicken is fully cooked.

5. Make the sauce

Add the white wine and let it simmer for 5 minutes over medium-low heat. Stir in the cream and tomato paste and cook until the sauce thickens slightly.

6. Combine the pasta and sauce

Add the cooked linguine to the skillet and toss until fully coated in the sauce.

7. Add Parmesan and serve

Sprinkle with Parmesan cheese to taste and serve immediately. Enjoy warm.
