  • ¼ cup pasta water (reserved)
  • 2–3 tbsp cream cheese or ¼ cup heavy cream or ¼ cup evaporated milk

  • 1 tsp lemon zest or a squeeze of lemon
  • 2 tbsp grated Parmesan

Step-by-Step Instructions

1. Cook the pasta

Boil pasta in salted water according to package instructions. Reserve ¼ cup pasta water, then drain.

2. Sauté the garlic

 Heat olive oil (or butter) in a large skillet. Add garlic and cook 30–45 seconds until fragrant.

3. Add the tuna   

Break tuna into chunks and stir gently into the garlic.Warm it through without overcooking.

4. Create the sauce

  • Creamy version: Add cream cheese or cream + a splash of pasta water. Stir until smooth and glossy.
  • Non-creamy version: Add pasta water + a drizzle of olive oil to lightly coat the pasta.

5. Season

Add salt, pepper, chili flakes, and lemon zest. Adjust to taste.

6. Combine

Add drained pasta directly into the skillet and toss until well coated. Add more pasta water if needed for creaminess.

7. Serve

Finish with Parmesan, parsley, and lemon juice. Serve warm.
